Kale can be hard to get kids to eat sometimes. At least for my kids it is. They eat a wide range of vegetables however, Kale is one they all will fight me on. So I found an easy way to sneak those nutrients in.
Kale contains, fiber, antioxidants, calcium, vitamin K, vitamin C, vitamin B6, folate, iron, potassium, calcium, magnesium, and phosphorus. It is a super food and very beneficial to all.
A terrific way I have found to get my kids to eat Kale is to dry it and make it into a powder that I can sprinkle in smoothies and they don’t even know. Hehe. You can also add it to muffins, just not too much that you turn the muffins green!
To dry Kale: Rinse Kale leaves and place in a dehydrator, turn on and dry for about 10-12 hours. Kale is 85% water and takes some time to fully dry. Once dry and crunchy feeling, place in a blender and blend until a powder is achieved.
Store kale powder, in a mason jar with lid, in the freezer.
Triple Berry Smoothie:
1 cup greek vanilla yogurt(or plain)
2 cups frozen raspberries, blackberries, and strawberries.
1 Tablespoon Kale powder
2 Tablespoons ground flax meal
1/2 cup orange juice
1/2 to 1 whole banana
Place ingredients in blender in the order given and blend fully until combined. About 2 minutes.
